The Celiac Family’s Cilantro Lime Shrimp was a huge hit! When making the weekly menu plan I was out of ideas. So I used the Menu Plan Monday for it’s intended purpose. It did not take long to look through a few blogs in the list and compile a group of recipes that looked yummy and would be easy to prepare.
This Cilantro Lime Shrimp recipe did not contain a lot of ingredients and was pretty cheap to make, even with the shrimp. The shrimp came from Aldi’s for $4.99 each. These shrimp are the medium size one pound precooked frozen ones. Next I used Uncle Ben’s Boil-n-Bag brown rice. Again, I was looking for something quick, easy, and fool proof. The box with coupon cost me under $2.00. Last the cilantro cost $.70 for the handful. I had garlic, butter, and olive oil on hand.
The recipe had to be altered a little bit because the shrimp were precooked. While I was cooking all the other ingredients my son took the tails off the shrimp and rinsed them. After the sauce ingredients were done cooking the shrimp were added off of the heat and tossed so they would not become over cooked and tough.
The next time we make this meal I may add a splash of white wine in with the butter and then add the shrimp.
